Wash & clean chicken. Cut chicken in 1 inch cubes and marinate it with oil, salt & pepper. Keep it aside for at least 30 minutes.
Finely chop garlic, celery & ginger. Cut spring onion diagonally and keep in ice cold water. and then cut the onion 1 inch and separate the layers, and also cut bell peppers similar to onions.
In a hot pan add oil and add chicken to it. Stir fry till cooked. Keep it aside. In the same pan add some oil, saute garlic for 30 seconds, add ginger, saute it for 30 seconds and celery and saute it for 30 seconds on high heat.
Add bell peppers and saute for 30 seconds and then add onion and repeat the same. Add tomato ketchup, soy sauce and 50 ml water and bring it to boil.
Meanwhile, make a slurry of cornflour. Add 50 ml of water to 50 gms of corn flour and mix it well. It helps in thickening the gravy.
Add chicken to gravy and bring it to a boil. Add corn flour slurry and mix well. Add seasonings and spring onions and mix it. You can adjust the consistency of the gravy.
