Sabudana Khichdi is extremely simple to cook and yet so flavourful in taste. Made out of sago pearls, this dish is both vegan and gluten-free.

Rinse, and soak Sabudana in ½ cup water for 5 to 6 hours or overnight. Dry them completely.
Peel the boiled potatoes and chop them into small pieces. Heat 1-2 tbsp of Sunny Sun Lite Oil in a pan or wok and when the oil is rightly hot, add cumin seeds and let the seeds crackle.
Now add turmeric powder, finely chopped green chillies, black pepper, roasted peanuts to it. Mix well and sauté the mixture for a while.
Now add Potatoes and give everything a good mix. It’s now time to add Sabudana and salt to it. Stir well until everything mixes together. Cover the mix and let it cook for 2 to 3 minutes on low flame.
Check the khichdi after 2 minutes. Stir well. Cover again and let it cook for 2 more minutes. Repeat the procedure and continue cooking the Sabudana until they get transparent.
Within 7 to 8 minutes’ khichdi will be ready. Now mix finely chopped coriander leaves and lemon juice. Sabudana khichdi is now ready to be served!
